So I had a pretty splendid weekend, I may a cake for my sisters birthday, a rather unique cake. A vegan cake. A chocolate and avocado cake…. yes I understand that sounds odd.
Surprisingly it wasn’t particularly unpleasant. Tasted much like cake, and if you didn’t let the green avocado buttercream style icing put you off – it wasn’t bad at all. My mum even had seconds AND took some home to have the next day.
It all started because one day I was having dinner with family and my 5 year old neice (who is quite the baker) was listing all the different kinds of cakes she could create. Avocado which happened to be on the dinner table was included in said list.
Now that got me thinking because yes it’s a strange idea, but hey some kids come up with some pretty genius stuff. I decided in that moment that I would make this dream of an avocado cake come true. And I did. And it wasn’t half bad. My neice seemed to approve, announcing “It just tastes like cake!”
So we all had our cake…and ate it too.
